Press Release-The new ‘Farm to Table’ menu was launched last week, with versions specific to each of the hotel chain’s major restaurants – Hi Tide at the Bay Gardens Beach Resort and Spices at the Bay Gardens Hotel.
The new menu creatively infuses a number of locally sourced sustainable organic ingredients from local produce, poultry and pork farmers and fishermen. Items on the menu range from fresh vegetable soups, Authentic St. Lucian Accras, Home Grown Rabbits, Anse La Raye Roast Pot Fish, Warm Pemme in Banana Leaves and much more with Bay Gardens’ signature flair. The local selections feature a custom St. Lucia icon which allows diners to easily identify them.
The move was significant for the locally owned hotel chain for two primary reasons. Firstly, the company believes in creating positive linkages that impact and grow the local economy. Second, this is in keeping with the company’s mandate to become Green Globe certified this year; a process which is well underway. Sourcing as many ingredients as they can locally helps reduce the ‘food miles’ (a measurement of the fuel used to transport a food item from producer to consumer).
Executive Director of Bay Gardens Resorts, Sanovnik Destang commented that Bay Gardens Resorts hopes to expand their farm to table menus with time to incorporate even more dishes. “We will continue to push our chefs to utilize the excellent variety we have available locally to create flavorful and sophisticated options for our diners, both local and foreign.”
